My youngest has been struggling with some issues at school so I thought it might be fun to surprise all the kids with a simple set up to decorate Christmas cookies.
Earlier in the day I baked up a batch of my favorite sugar cookies. Seriously, you MUST try these! They are soft and tasty and most importantly, hold their shape! Maintaining shape is key to successful cut out’s. You can find the recipe here. The icing is super simple….
- 1 1/2 cups powdered sugar
- 1 Tablespoon light corn syrup
- 1/2 teaspoon vanilla
- 3 Tablespoons room temp water
Mix all that together until smooth. Wondering how you would know if it’s the right consistency? It should drizzle down as you lift up the spoon and hold a peak briefly. You can always add more water (no more than 1/2 teaspoon at at time!) or more powdered sugar if you got carried away with the water. 😉 You can easily color it as well with food dye. I made up three batches of icing for a total of 4 colors and a larger batch of just white. Easiest way to ice these Christmas cookies is to pour the icing into baggies and cut off the tip. Pipe around the edges and then fill in the middle. We like to use toothpicks to help fill in any holes are to do more delicate designs.
To make the table look fun and for easy cleanup, I covered the table in brown kraft paper and added some fun words to the two different stations.
Naturally the kids were super excited when they got home and found the table all ready for them to decorate. (I baked the cookies ahead of time so they could get right to it!)
We all enjoyed decorating christmas cookies. It’s fun to see how the cookies change from year to year. Each year the kids are more and more into taking their time and doing more intricate designs. In the end not only do they taste good but they look lovely.
In the end we were all so pleased with the results…
